Jota (Pork and Sauerkraut Soup)
1/2 lb sauerkraut
1/2 lb smoked pork (or prosciutto bone for better flavor)
1/4 lb dry beans
12 oz. potatoes
1 garlic clove
1 Tbs tomato paste
1 bay leaf
water
pepper and salt
Bring the sauerkraut, meat, bay leaf, salt and pepper to a boil over medium-high heat, reduce the heat to low and simmer until the meat is tender. Bring beans, which have been soaked overnight, to boil. Lower the heat and simmer until the beans are tender. Repeat with potatoes.
When everything is fully cooked, mash potatoes. Add the potatoes and the beans (along with the water in which they were boiled) to the sauerkraut. Add tomato paste, salt and pepper to taste.
